Background

The fruit for our Cloud Dancer Sauvignon Blanc is grown predominantly in the Pemberton and Geographe regions of Western Australia. Both areas have reputation for consistently producing aromatic intensely flavoured Sauvignon Blanc wines in a dry, refreshing style. All fruit for this wine was picked during the coolest part of the night to ensure the fruit reach the winery as cool as possible. A prolonged cool and wet growing season meant the vines were lush and healthy heading into ripening and carrying slightly higher than average yields. This resulted in later maturity and harvest dates which was accentuated by the cool and wet ripening months. Conditions not experienced in Western Australia for over 10 years. These conditions, coupled with the absence of heat events, resulted in highly aromatic whites. Following a gentle pressing, the juice was cold settled in tank at 10C for 2 days before being racked, warmed to 17C and inoculated with a selected yeast strain. This yeast strain helped preserve the aromatic intensity of the characters found in Sauvignon Blanc. During fermentation, cool temperature were utilised to encourage aroma production, texture and overall varietal character. On the completion of fermentation, all batches were stabilised, chilled to 0C and clarified to avoid extended contact on yeast lees. The wine was then blended and lightly fined before being stabilised and filtered only once to produce a bottle ready wine. This minimal handling has helped to retain the attractive primary fruit flavours and aromas critical to our style.
