This Sav pairs beautifully with seafood. The fresh fruit and bright acidity in the wine are a perfect compliment to pan-seared scallops and salmon tartare.
This wine offers aromas of honeysuckle and sweet herbs, that are supported by flavours of white nectarine.
The palate is juicy and mouth-watering with notes of white peach as well as exotic hints of kaffir lime and lemongrass. The texture of the wine of round and ripe. Flinty minerality adds an ethereal , savoury complexity. Structurally the wine is underpinned by carefully intertwined acidity that builds towards a fresh and vibrant finish.
The Sauvignon Blanc for their 2013 To Koko was sourced from some of the oldest vines across four distinguished vineyards. The vineyards are located within sub-regions of Rapaura, Brancott and Renwick. These were specifically chosen due to a combination of flavour intensity borne from vine age, balanced acidity and a ripe aromatic profile.
