The nose shows lifted aromas of lime blossom and aromatic citrus fruits.
The palate has great intensity and length with mouth-watering acidity.
By combining both traditional and modern winemaking techniques we are able to make handcrafted wines of complexity, depth and intensity. Picked early in the morning, the fruit was delivered cool to the winery. Gentle pressing to minimise phenolics and cold settling preceded fermentation at low temperature. After a brief maturation period the wine was bottled to retain its freshness and vivacity.
