The obvious chardonnay fruit is complemented by well integrated American and French oak which builds upon sorne lovely buttery malolactic characteristics" This is all in a package that has great length due to a lovely spine of acidity. The wine finishes fresh and inviting leaving you looking for another glass!
Winemaking Notes: The Australian Chardonnay style has evolved over the decades and we are now delivering to the consumer wines with great complexity but that are delicious and refreshing. To achieve this style with our wine we split our Chardonnay juice into different parcels at the drainer. 1. The "feral" component. The first juice straight out of the drainer is placed into barrels and left to have a wild ferment with natural yeasts. This produces a wine that has a complex nose and an incredible palate structure with great length. 2. The pristine free run. This comes from the next "run" out of the drainer that is cold settled, resulting in very bright juice which starts its life fermenting in tank, and then is transferred into oak halfway through ferment. This technique produces classically clean, fresh, varietal Chardonnay. 3. The Malo component. This is where we use the pressings and because of the elevated pH of pressing we are able to create a secondary fermentation using lactobacillus bacteria which produces a wine that is rich, intense and has buttery undertones. 4. The Magic. Which will remain our secret! Once the ferrnentations are complete the parcels are then aged in oak until in September October whereupon they are blended to create the exact complex style we are looking for and then the wine is bottled and given some bottle age before being released.
