Lifted varietal characteristics of apricot, nectarine band rock melon complimented with cashew nut toasty oak characters.
The palate shows ripe, rich flavours of apricot, melons and tropical fruits. Stirring on yeast lees has resulted in a rich and creamy mouthfeel with oak flavours of pecan nuts and spicy cashews.
The wine making team selected Gingin clone Chardonnay fruit for this wine, harvesting when the berries showed riper tropical fruit characteristics. The Gingin clone, grown in Margaret River, is world renowned for producing wines with complex citrus and tropical fruit flavours. In the winery the fruit was crushed and pressed, and the juice left slightly turbid to increase the texture on the palate of the final wine. A Burgundy yeast strain was chosen to enhance the varietal characters of the fruit and add complex fermentation characters such as fresh almond, hazelnut and toasted bread. Regular bâttonage after alcoholic fermentation has increased the texture and complexity of this wine. Partial malolactic fermentation has added a creaminess to the final wine.
