The Palate is vibrant and fleshy featuring peach, citrus, with subtle toasty oak flavours. There is a creamy lime tart nuance, with flinty, spiced vanillin oak undertones supported by fresh, natural acidity.
The 2015 Margaret River Chardonnay was picked at optimum ripeness during the coolest period of the night to help retain the primary fruit flavours. It was transported directly to the winery post-harvest, crushed and pressed to tank and allowed to cold settle. 48 hours later the juice was cleanly racked and inoculated. When the juice was actively fermenting it was transferred into Burgundian oak barrels. Post fermentation the lees were stirred gently once a week until the balance between oak, lees and fruit characters was achieved. Malolactic fermentation was not encouraged so the vibrant natural acidity was preserved. The wine was then blended, fined and bottled. The 2015 Margaret River Vintage resulted in lower than expected grape yields across all varieties, due to inclement weather conditions during flowering in OctoberNovember, impacting fruit set. The January and February growing period was mild, dry and sunny without any extreme heat events. White varieties were picked early with great sugar accumulation, well matched with seed ripeness and flavour development. Minimal Marri blossom in the area increased netting to protect grapes against hungry Silver Eyes (local birds).
