The 2015 BC Chardonnay is the second special release of Adelaide Hills Chardonnay made at the Tapanappa winery in the Piccadilly Valley by Brian Croser from grapes purchased from chosen growers. The vineyards selected are potential distinguished sites and the growers have managed their vineyards to the exacting standards expected by BC. The 2015 BC Chardonnay is from three Adelaide Hills vineyards, 40% from two very cool Piccadilly Valley vineyards and 60% from a warmer site at Woodside. The Woodside grapes were hand harvested in the second week of March and the Piccadilly Valley grapes in the third and fourth weeks of March after a growing season that was exactly at the long-term temperature average of the cool climate Adelaide Hills. The crushed and de-stemmed grapes were chilled to 2C and the cold juice separated at the press was allowed to settle for 24 hours. The partially clarified juice was fermented in French oak barriques (30% new) and left on lees until clear racking after 10 months. There was no malo-lactic fermentation. The clarified wine was bottled in February 2016.
