Macabeo, Xarello and Parellada
Enjoy well chilled either on its own as an aperitif or with a selection of tapas, fresh seafood or smoked salmon.
Pale yellow with hints of green, star bright.
Fine, delicate aromas, with green fruit predominating, mainly as apple and pear, with light nuances of ripe tropical fruits, banana skin and touches of pineapple, over a citrus and fresh herb base, and combined with harmonious notes of mid length bottle ageing.
Fresh and appealing on the palate, with the mousse well integrated, the full flavours matching those of the aromas, mainly as green fruit and citrus. Light but long and elegant in finish.
The grape varieties used to create the base wine for Cava are Macabeo, Xarel·lo and Parellada. Harvest begins at the end of August with Macabeo and ends at the beginning of October with Parellada. Grapes are hand harvested and collected in 25kg capacity plastic boxes. From these varieties, using pneumatic presses the must is obtained. It is allowed to rest for 24 hours to fall bright naturally. Once this has happened it is transferred to fermentation tanks, each variety separately. The first fermentation is carried out in 600.000 litre capacity temperature controlled stainless steel tanks, at temperatures between 14 and 16ºC. Into these tanks we seed our own selected yeasts, from the unique Freixenet collection, and the first fermentation is started. Once this is finished, after 10 - 12 days, and following a series of treatments and rackings, the base wines are prepared for blending and bottling for the secondary fermentation to take place.
