Background

Semillon was added to a small volume of Merlot and fermented for a short time. The blend was then drained, pressed and fermented as a white wine to minimise colour extraction but draw the fruit flavours from the skins. This allowed delicious berry flavours to combine with fresh citrus characters and light acidity. The wine was then fined and bottled to capture lively, fresh flavours.
