100% Shiraz

Ruby red.

The nose is lifted, complex and expressive with an array of cherry and red berry fruit aromas framed by notes of spice and dried herbs.

The palate is medium bodied but plush with a core of ripe berry fruit flavours, plums and smoky spice matched by fine tannins and a precise structure, before finishing with bright acidity.

Sourced from established, low-yielding and 100% organically certified vineyards in McLaren Vale and Inland South Australia. Partially handpicked into small bins and primarily de-stemmed before a slow, cool fermentation in small open fermenters with hand plunging twice daily, no additions and ten percent whole bunch. The McLaren Vale component was matured in seasoned large format French Oak whilst the inland component was matured in stainless steel. Blended and bottled without fining, just a loose filtration and the barest minimum of sulphur addition.
