This wine shows lifted aromatic black fruits, layers of star anise spice, pepper and mocha, combined with subtle savoury characters from oak maturation.
Flavours of black cherry, cracked pepper, anise, vanilla, subtle roasted coffee and dark chocolate oak, and a savoury finish. The wine is balanced with dense flavour intensity and round, integrated fruit and oak tannins.
Picked with optimum flavour and tannin ripeness. A selective harvester ensured only the cleanest fruit made it to the winery: batches include mostly those of Wilyabrup and Wallcliffe sub-regions. Most parcels of fruit were chilled, post-crushing to under 10 deg C, a "cold soak" technique, to allow riper grape skin tannin extraction. Yeast isolated from a vineyard in the Rhone Valley, and cooler fermentation temperatures (25 - 28 deg C) were chosen to enhance natural fruit flavours and aromas. The ferments were completed in 10-14 days, pressed off skins, and inoculated for malolactic fermentation, to reduce malic acid concentration. It completed this, whilst maturing with fine-grained oak.
