Background
Block 9 Shiraz was handpicked then de-stemmedcrushed into 8 tonne open fermenters and inoculated. The ferments were pumped over with aeration three times a day; temperature was held around 25°C. The wine was then pressed to new and used French Oak barrels for its Malo-lactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended, fined with egg whites and bottled after 18 months barrel maturation and further aged in bottle before release. Temperatures have been slightly warmer than the elusive "average" for most months, although February was very cool. Slightly warmer than average, however we did not have any really hot days (+35 0C), hence acidity levels have been naturally high, and fruit character seems intense. In terms of similarity to a recent season, 2011 is probably closest to 2007.
