Rich and ripe with aromas of mulberry jam, black cherry and plum with lovely high notes of spice and black pepper. The oak maturation adds background notes of cedar and savoury spice.
This fruit driven Cloud Dancer Shiraz has aromas of red and dark berries with hints of spice. The palate is soft and round but finishes very long with dark, berry fruits and fine supple tannins. It's a gentle, long and silken style, with ripe flavours and a long, fresh and bright finish. The moderate alcohol of only 9.5 per cent makes this wine perfect for any occasion.
The vineyard blocks that grow fruit for our Cloud Dancer Shiraz, are located on warm gravelly soils that encourage full, ripe flavours, intense colour and fine soft tannins in the end wine -all hallmarks of our style. The fruit was harvested to capture the array of flavours present at the various stages of ripening. Select parcels were picked cool at night and soaked on skin at 5 degrees for 4 days prior to fermentation to provide further flavour and textural characters in the end wine. Once all the batches commenced fermentation, the wine was pressed in tank until dry. Malolactic fermentation was conducted in tank before being matured in French oak for 8 months. Following maturation, the wine was blended and lightly fined with local, fresh free-range egg whites before reduced in alcohol and filtered once prior to bottling.
