Bush vines have no trellis system to expose the canopy to more sun and, as a result, the fruit ripens slowly, developing greater flavour. The berries are difficult to pick, and yields are low, but they make juice with a power uncommon in these days of accountancy viticulture. The aroma is a big hit of berries and spices. The velvety-smooth palate shows complete harmony between the oak and the fruit. Keep it for another 5 years at least - it will only get better.

Scotch fillet, baked vegetables and the best of beef gravy.

18 months new French and American hogsheads.

Very deep, intense deep ruby.

Toasty sweet vanillin oak from partial barrel ferment, black pepper, spices and concentrated ripe plum, and chocolate, rich and complex, with hints of herbs and earthy fruit characters.

Attractive plum, anise ,choc characters complemented with a touch of toasted nutty oak and vanillin complexity. A combination of these complex flavours results in a soft and generous wine of great flavour persistence, complexity and weight, with mouth filling grainy tannin structure that will soften with further ageing.

Vintage 2007 A dry winter and Spring of 2006 saw drought conditions prevail with less than half the annual average rainfall for the area leading up to vintage , with soil moisture levels low, shoot growth was restricted and so were crop yields through out the district. The old widely spaced, gnarly bush vines at our Blewitt Springs vineyard in the McLaren Vale region saw warm and mild conditions in summer leading into and through vintage 2007. They performed better than most non-irrigated vineyards under the prevailing mild drought conditions. The absence of searingly hot weather in the ripening period , and a long dry spell prior to picking produced favourable conditions for excellent fruit ripening ,developing ripe tannins giving excellent tannin structures and concentrated fruit charters in the old Bush Vine Shiraz in a season where the fruit could ripen to full maturity with out undue stress.
