This wine is perfect on its own or paired with roast beef and seasonal vegetables.
Displays delightful aromas of blood plums and blackberries with a lovely note of sweet spice from the oak.
The palate is full bodied and rich with flavours of black fruits supported by vanilla spice and a hint of cracked black pepper. The wine has a beautiful acid balance, all of these work together harmoniously with the firm yet fine tannins that create a long silky finish.
The fruit for this wine was picked at optimal ripeness in the cool of the night before being destemmed, crushed and fermented in at cool temperatures for around 10 days. This aids in fruit retention. Once fermented the wine is allowed to go through malo-lactic fermentation and then transferred to new and old French and American Hogshead barrels to mature for 18 months prior to bottling.
