Chapel Hill Winery was built on the site of the historic Seaview Chapel. The Chapel was built in 1865 and now serves as their tasting room. The first vines were plated at Chapel Hill in 1972 and the first vintage was in 1975. The region's rich winemaking heritage is perfectly captured in these resilient old bush vines that create a rustic and poised wine.

As there exists a deep respect for our land and vines we promote soil health and vine health to build resilience and character in our vines. All grape marc and mulched bunch stems from the winery are composted onsite then spread back on the vineyard, negating the need for synthetic fertilisers. The fungicider spray program has been revised to include sprays which have minimal impact on beneficial inspects, encouraging a natural balance in the vineyard that prevents pest and disease outbreaks. Hoeing, spot spraying and brush-cutting have replaced blanket under vine Herbicide spraying. Colunteer cover crops are encouraged in both the mid-row and under vine area to smother out problem weeds and provide valuable cover for the soil, thus reducing erosion and evaporation. Below average winter rainfall resulted in a early commencement to the growing season. A warmer than average summer, with no extended periods of extreme heat, resulted in a condensed vintage. Vibrant fruit flavours and acidity were still prevalent and the resultant wines were both varietal and textural. Gentle and patient winemaking is preferred to ensure that the wine expresses the unique site characters. The hand harvested grapes were gently crushed, germented in an open fermenter and hand plunged to facilitate subtle tannin extraction. After 10 days on skins the fermenter was basket pressed and the free fun and pressing fractions were combined. The wine was then aged for 20months in 100% French oak. The proportion of new oak was kept low to encourage the continued expression of the characters that are exclusive to the vineyard site. There were no additions of any fining agents or tannins and the wine was not filtered prior to bottling.
