Palate

The palate is rich and sweetly fruited with layers of dark plum, exotic spices, subtle toasted oak and fine tannins. The ripeness and opulence of the fruit allows for immediate enjoyment whilst the structure promises a decade of improvement.

Background

A partnership with Adelaide Hills, McLaren Vale and Lower Murray wine growers, Burns and Fuller is a range of contemporary and fruit driven varietal wines made by Jim Zerella. Each wine is fruit driven and balanced with a core of fruit given complexity by a barrel aged component. Sourced from a combination of established, dry-grown vineyards in central South Australia and low-yielding McLaren Vale vineyards. Wines are made and matured by Jim Zerella in McLaren. The fruit is hand-harvested and vineyards sorted before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in seasoned French and American Oak (30% new French) for nine months before bottling with minimal filtration and sulphur addition. 2014 can be characterised by tiny yields, unsettled weather and very good wine. A cold start to Spring disrupted flowering and significantly reduced yields. As is often the case, the weather flipped with two heatwaves and then heavy rains- however the small berries and bunches handled the conditions. The result crop was for many the smallest on record but the fruit is outstanding- balanced and intensely flavoured.
