Background

Victoria's Yarra Valley was once dairy country, but during the 1960s farmers recognised its potential as a premium wine region and started planting grapes. The cool climate, with frosty nights and sunny days, slows down the ripening process and elongates the ripening period. This gives grapes the optimal balance of physiological ripeness (berries and seeds) and sugar ripeness.
