This Pinot comes from the Elysian Springs estate vineyard on Eden Valley Road, in Mt Pleasant, located at the northern-most end of the Adelaide Hills. It has a lovely cherry-bright colour with flavours of dark plum, strawberry, lifted by a touch of spice.

This lovely cherry-bright Pinot shows dark plum and strawberry fruit with hints of wet loam on the nose and palate, lifted by a touch of dried spice. A medium-bodied wine with integrated complex flavours, rich and lingering tannins.

Background

Our position produces elegant, varietal Pinot Noir with red fruits and mid-palate texture, which reflect the low yields and early morning harvesting which occur during the small window of perfect ripeness. 2012 was a fine growing season, with warm days balanced by consistently cool nights. It was a relatively dry season with grapes ripening a touch earlier than usual. The first Pinot Noir being harvested mid February and the last coming in the first week of March. Weather conditions prior to harvest were also mostly dry, ensuring perfectly healthy and the resultant fruit was exceptional. The blend comes from our own estate vineyard on Eden Valley Road, in Mt Pleasant, located at the northern-most end of the Adelaide Hills. MV6 and H1N1 clones are grown to be perfectly ripe, healthy grapes, low yields, and hand-harvested at precisely the right time to best represent a "sense of place." . Whole bunches , hand-selected and picked in the cool of the early morning. Destemmed without crushing the fruit. 30% of this was whole cluster fermented. Remaining fruit was crushed and went through traditional open fermentation with 30 day extended skin contact. These were racked into 50% new and seasoned French oak hogsheads. Bottled directly thereafter without fining and with minimal filtration to capture the purity of taste and texture of our Pinot Noir.
