Rich forest fruits on the palate, with a background of coconut and chocolate oak, with a soft tannin finish.
Merlot was harvested from a vineyard on Wildwood Road in the northern sub-region of Yallingup, from 20 year old vines, 10 km inland, from a vineyard in Carbunup sub-region. The fruit was crushed to open fermenters, in separate batches. The Merlot, benefited from warm fermentation temperatures (up to 30° C) over 10 days, with a short period, of extended maceration on skins, to allow texture and ripe tannins to develop. French oak was used for maturation over a period of 12 - 15 months, where malolactic fermentation was, also completed. The wine had lightly fined, prior to filtration.
