Complex nose showing some classic cool-vintage characters of black olive, prune and hint of saline combined with sweet earth and truffle.
Super fleshy mouth feel with dense dark fruit flavours of cedar, prune, cassis and liquorice. The finish is very long with firm tannins.
The 2011 Coonawarra vintage was cool with significant levels of precipitaCon at various stages. These condiCons limited producCon, but the small amount of fruit which endured the season benefiTed from the extended ripening period. This resulted in excellent flavour concentraCon and tannin structure, essenCal for longevity. Following harvest, in the second week of April, fruit for this Cabernet was close-top fermented with grapes remaining on skins for thirty days to ensure extended ageing potenCal. MaturaCon took place in new (70%), and second-fill, French oak Barriques for 22 months before final blending and bottling.
