Although originally founded in the Hunter Valley, McWilliam's has for many years crafted wines with grapes grown in regions across Australia. This is sourced from the cool-climate Hilltops region of NSW, renowned for its wines of elegance and refinement.

Elegant bouquet of both red and black currants, with hints of forest berry and a touch of dried herbs.


Palate shows bright redcurrants, blackberry and brooding forest fruit berries, while being supported by 100% French oak that balances this wine. Soft supple tannins add to the complexity of this wine, making it an elegant wine with medium style body.


Machine harvested on cool nights in Hilltops to retain vibrancy of the fruit. These grapes were fermented in open top fermenters and gently pumped over four times daily for a period of six days to maximise colour extraction while maintaining a soft tannin profile. Once fermentation was complete the must was then pressed off skins and the wine racked into a mixture of old French oak and allowed to mature for a period of ten months. Selected parcels of Hilltops Cabernet Sauvignon were then pumped out of oak. A light finning was performed to remove any harsh phenolics prior to bottling.
