Complex aromas of spice, dark berry fruits and subtle savoury characters. A hint of dark chocolate and mint compliment the vibrant fruit characters.
The mouth-feel is full with bright fruit flavours and added oak spice complexity, well supported by a soft acidity. Fine tannins carry the concentrated flavours towards the middle palate, leading to a long savoury finish.
The fruit was machine harvested then destemmed and crushed into static fermenters where it was cold soaked for 6-8 days. Post cold soak the juice was allowed to naturally warm up and then inoculated with yeast. Once fermentation was established the tanks were pumped over with aeration twice a day. Temperature was held between 24-26°C for a slow extraction of tannins and increased development of fermentation complexity. The wine was then pressed and transferred to barrel for malo-lactic fermentation allowing a soft integration of the grape and oak tannins. The wine was fined with egg whites then bottled after 15 months of oak maturation. Vintage 2014 presented favourable weather conditions across all varietals in Margaret River - a truly 'classic' Margaret River weather pattern with ideal diurnal weather conditions coupled with an almost constant breeze. A huge amount of Marri blossom in the region has ensured that vineyards experienced minimal bird damage. Autumn provided milder conditions during the day and cooler night time temperatures, perfect for Cabernet Sauvignon from Margaret River enabling full physiological development especially in concentrating its flavour spectrum and in softening tannin levels naturally.
