Lifted varietal Cabernet nose - mint & leaf with ripe dark berry fruit, combined with well integrated complex oak characters.

Palate

Richly flavoured yet elegant with great depth of character. Ripe berry fruit complexed with hints of mint and tomato leaf, it is a wine of balanced weight, depth, complexity and length - all the things you look for in a premium cabernet. Distinctive regional flavours of violets and plums make this an outstanding Cabernet.

Background

Vintage: A cool and wet spring with ideal flowering conditions resulting in a very good set and ideal crop level of 4 tonnes to the acre. Warm to hot conditions during the ripening period caused some heat stress but the Cabernet vines recovered during the cooler month of April.Winemaking: The fruit was fermented on skins for 7 days at 20 - 22 degrees C , then drained and pressed. All pressings were returned to the free run, with the wine then being placed in new and 1 year old French oak barrels. After Malolactic fermentation was complete the wine was racked off the gross lees and returned to the same barrels after they had been cleaned. The wine spent a total of 21 months in these barrels.
