Selected parcels of Cabernet Sauvignon and Merlot were harvested at optimum maturity, fermented and left on skins in static and rotary fermenters for seven days to maximise colour and flavour extraction. After primary fermentation the grapes were soft pressed and underwent malolactic fermentation before being aged on French oak for six months. The wine was blended and filtered prior to bottling. The mild weather conditions during the lead up to harvest together with warm January temperatures were the perfect conditions for optimal flavour development across the white varieties. The odd burst of extreme heat resulted in an early start to vintage but as the harvest progressed these conditions moderated, extending the ripening period for the reds ensuring they too reached maturity with an ideal balance of sugar, acid, colour and flavour.
