Blackcurrant, plum, mint dry herbs and bay leaf, combined with subtle savoury notes and layers of dark chocolate, sweet vanilla and toast.
The two varieties work harmoniously to create a fruit driven wine, evident juicy black fruits with complimenting herbaceous characters and lingering mocha like flavours from oak maturation. The mouth-feel is elegant and refined with attractive dusty tannin structure.
Exhibiting the best of both varieties, this blend of Cabernet Sauvignon and Merlot is grown on our prized Miamup Vineyard. The fruit was picked with a selective harvester, not only to ensure clean fruit, but also to reduce maceration. This gentle method resulted in whole berries still intact for primary fermentation and assisted in creating a wine with intense fruit characters. Only the best fruit is included.Primary fermentation conducted in stainless steel with Bordeaux yeast strains and 50% of the Cabernet Sauvignon receiving extended skin maceration to improve structure, colour and soften tannins. Post fermentation a portion of the wine is matured in a combination of French and American oak approximately 12 months. Individual components are blended by taste until the desired flavour profile is achieved, the wine then receives a light fining before being filtered to bottle.
