Textural and elegant, sweet fruit on the mid palate and balanced oak and grape tannins on the finish.

Background

Our frost protection system in Coonawarra saved us from the severe widespread frost that affected other vineyards. A long dry growing season produced good ripening conditions for Cabernet Sauvignon and yields were the best for many years. Cabernet is showing great complexity and balance typical of a great Coonawarra wine. Merlot parcels have produced lovely complex fruit flavours and a natural acidity. A very good year for Coonawarra. Picked when acid and flavour are ripe, this is then destemmed and crushed into static fermenters. Fermented for 10 days using selected yeast strain and then pressed off skins into French oak for 18 months maturation. Barrels are then selected, blended and prepared for bottling.
