Cabernet Sauvignon (60%) Merlot (40%)
Roasted, grilled or stewed meats. Charcuterie platter and soft cheeses.
French oak for 18 months maturation.
Deep crimson red.
Fruit intensity of blackberry and blackcurrant on the nose.
A textural and elegant palate. Merlot provides sweet fruit to the mid palate and balances the subdued oak and grape tannins on the finish.
The soils of Coonawarra consist of thin dark brown to dark grey clays interspersed with broken limestone fragments. The shallow soil overlies soft crumbly limestone at depths of as little as 10cm so that the vines effectively grow in limestone rock. The shallow soils restrict vigour & this, coupled with rigorous canopy management, allows us to control berry size and bunch numbers & thus eventual crop load. This control of crop level and berry size gives our winemakers the best possible starting material with which to create premium red wines. 2017 was the coolest latest year for many years in Coonawarra. Our Coonawarra vineyard generally ripened about a week behind Wrattonbully to the north. Merlot was picked in good condition in early April. Cabernet was picked in good condition in the last week of April despite the cool rainy conditions. The resulting wine is elegant but lighter than its counterparts to the north.
