Nose

Intense dried apricot, marmalade and creme brulee aromas, with shiitake mushrooms and peach notes also evident. Almond and biscuit characters show through from the high quality French oak.

Palate

Intense flavours of lemon marmalade, dried apricot and mango are found, with nuances of peach, red apple and exotic lantana fruit flavours. Excellent complexity and length derived from the French oak is highlighted, with an excellent balance of sugar and acidity providing weight, balance and length.

Background

The Semillon grapes were left on the vine for approximately 2-3 months longer than normal to allow for development of the botrytis cinerea mould. Hand harvesting took place and the grapes were cold soaked for 24 hours prior to being pressed off into tank for a short settling period. The juice was then racked, warmed and inoculated with a yeast strain capable of tolerating high sugar levels and enhancing fruit flavours. After a few days of initial fermentation, the juice was transferred to New and used French Troncais and Allier oak to ferment through to balanced sugar and alcohol level desired for this style. Once the required aging and oak integration had been reached, the wine was pumped out of barrel and blended to the style required, then lightly fined and stabilized prior to gentle filtration prior to bottling. Intake of Riverina fruit was complete extremely early in 2010, possibly one of the earliest vintages on record. This saw the reduction of phenolic development in the vineyard and the retention of fruit character. Overall, the vintage has produced very good quality with heat issues being minimal. Practically all fruit in the region has been allocated to high grades, doubtless helped by the fact that most varieties have yielded less by 15-20%, despite full water allocation being available. The botrytis mould set in during April and was heavily monitored throughout this month, waiting for the right amount of incidence before picking.
