Foods: Barbecued quail, roast duck or soft ripe cheeses.
Oak: French oak.
Colour: Deep red-brick colour with purple hues.
Nose: Red fruits and black pepper aromas on the nose.
Palate: The palate displays raspberry, liquorice, white pepper and ripe plums with French oak adding spice and complexity that is all balanced with the textured tannins. The wine has a dense structure and is full-flavoured, but without the viscosity and burn of alcohol seen in too many warmer, over-ripe Shiraz wines.

Background:

Shiraz grown in cool-climates such as the Adelaide Hills is beginning to establish a name for a style that displays elegance, subtle richness and savoury characters. Nova Vita vineyards are perfect sites for growing Shiraz in the Adelaide Hills and allow for the crafting of a wine with elegance, finesse and developed ripe characters while retaining typical cool-climate characteristics. The 2010 season was a warm, dry and early year with low yields due to poor fruit set. The grapes were harvested in two batches at the beginning of April well before the beginning of the autumn rains. The ferment took place in 10 tonne fermenters. Cap management and colour extraction was managed through a combination of daily plunging and juice pump-overs. Download as PDF
