MerlotMerlot is grown everywhere in Australia; from the hot Riverina region, where most export Merlot is grown, to the cooler regions where most quality examples can be found – most notably, premium Merlot comes from Adelaide Hills, Eden Valley, Orange, Limestone Coast and Coonawarra. The Barossa Valley and McLaren Vale also boast some notable examples. In Western Australia, Merlot is successfully blended with Cabernet Sauvignon to make stunning Bordeaux style blends. The success of Cabernet Merlot blends lies in each contributing to what the other lacks. Merlot is fruity and soft, whilst Cabernet Sauvignon is more austere and finely structured. Blended together they create a mouth-filling experience, not to be missed. Plummy and soft, the world is thirsty for this easy-drinking variety. The soft and fruity flavours makes Merlot a particularly good food match with pasta dishes and cheese.
