My favourite wine style is Pinot Grigio not too alcoholic, with lovely aromatics, length and it suits the foods that people enjoy. For this wine, I added Tocai and Vermentino to the Pinot Grigio. The fruits all grown by the incredible Denis Pasut who settled in Victoria back in the 70s. I make this wine using fruit from old vines, which have a very solid structure and flavour. In the vineyard you can always pick an old vine (at least I can) they behave differently to young vines, standing up better to stress and adverse conditions. This has beautiful aromatics but structure as well, with beautiful natural acidity. Its not heavy in tannin so it wont knock you around the next day like a big Shiraz would. It ages beautifully you could easily keep this for 10 years. Kathleen Quealy, winemaker.
